Recently, I’ve been reading tons of books about vegan living. Although I would not consider myself a vegan, I am definitely striving to eat more plant-based meals and cut dairy completely out of my diet. After reading, Superimmunity, and watching, Forks Over Knives, our whole family has tried to eat less meat/dairy and more plants/whole grains/nuts/seeds. I’m surprised and thrilled how easily my husband has jumped on the bandwagon with me. Even though we live near San Francisco, eating out and going to friends’ homes are the hardest, so I try to cook as healthy and clean as possible while we’re at home.
